1cupHummus (your favorite flavor)
10ouncesGrape Tomatoes(sliced in half)
2TablespoonsExtra Virgin Olive Oil
2cupsRomaine Lettuce(chopped)
1largeHot House Cucumber(sliced and halved)
1/4small Red Onion(sliced)
1/2cupFeta Cheese(crumbled)
Homemade Tzatziki Sauce:
1 cupPlain Greek Yogurt
1TablespoonExtra Virgin Olive Oil
2teaspoonsFresh Lemon Juice
2teaspoonsRed Wine Vinegar
1teaspoonSalt
2teaspoonsFresh Dill (or 1/2 teaspoon Dried Dil)
2Garlic Cloves(minced)
1/2cupGrated Cucumber(squeeze in paper towel to drain off some water)

Preheat oven to 400 degrees or set on broil. Place pita or naan bread on baking sheet. Bake for about 5 minutes or until warmed.
Spread hummus on each pita. In a small bowl, add grape tomatoes, olive oil, and a few pinches of salt. Let marinate for several minutes.
Top pita bread with romaine lettuce, marinated tomatoes, cucumber, red onion, and feta cheese.
To make Tzatziki Sauce:
Stir together yogurt, olive oil, lemon juice, vinegar, salt, dill, and garlic. Stir in grated cucumber and taste for seasonings. **Squeeze the cucumber to remove excess water before adding to rest of ingredients.
Place dollops of tzatziki sauce all over the pita. Serve immediately.
