Start by cutting the chicken into small bite-size pieces. Place in a bowl and toss with salt and pepper.
Heat a large skillet over medium-high heat. Add butter. Once the butter is heated, add the chicken. Cook for about 5 minutes, or until fully cooked through. Stir in buffalo hot sauce.
Remove the cooked chicken from the skillet. If you want the tortillas to be slightly crispy, drizzle some oil or butter in the pan. Place tortillas in the skillet and sprinkle cheese into the center of each tortilla.
Top with buffalo chicken. Sprinkle with chopped cilantro. Optional: sprinkle with green onions. Heat until cheese is melted and fold over.
