Instructions
Heat large skillet over medium heat. Melt butter.
Add onion and saute for 3-4 minutes.
Meanwhile, fill pot with water. Generously salt the water. Heat until boiling. Once boiling, add pasta and cook according to package instructions.
Add chicken and peppers and cook for 7-8 minutes. Season with salt, pepper, and cajun seasoning.
Add chicken broth and cook for several minutes.
Add heavy cream and stir. Check for seasoning. Let cook over medium low heat until sauce starts to thicken.
Toss with cooked, drained pasta. Top with parmesan cheese. Optional garnish: roma tomatoes, parsley, and pine nuts.
