My family is obsessed with Chinese food and one of their absolute favorites is the popular Sweet and Sour Chicken with the perfect sweet yet tangy sauce. I wanted to create a homemade version at home, made from scratch, with all-natural ingredients.

This Sweet and Sour Chicken is made with boneless skinless chicken breast, cut into bite-size pieces, dredged, and then fried until golden and crispy.

The sweet and sour sauce is downright heavenly! It is a sweet and sour sauce made with pineapple juice, vinegar, garlic, sugar, soy sauce, red chili flakes, and a touch of ketchup. It is tangy, sweet, a touch spicy, and full of flavor.

Sweet and Sour Chicken Ingredients:

  • ChickenI suggest using boneless, skinless chicken breast in this recipe. Make sure to sprinkle with a little salt to season the chicken before dredging.
  • Eggswhisk the eggs together in a bowl and dip the chicken pieces into the egg mixture. This helps to bind the flour and cornstarch to the chicken.
  • Flour and Cornstarchusing a mixture of both cornstarch and flour makes the perfect coating.
  • Oilthis is what gives the sweet and sour the perfect crisp coating. I suggest using an oil such as canola or vegetable.
  • Pineapple Juiceuse 100% pure pineapple juice as it is the base of this sweet and sour sauce.
  • Sugargranulated sugar brings sweetness and pairs perfectly with vinegar.
  • Vinegaruse apple cider vinegar, rice vinegar, or white vinegar in this recipe. If you want a more tangy sauce, add more vinegar to offset the sweetness.
  • Soy Saucebrings a salty depth to the sweet and sour sauce. 
  • Red Chili Flakesadd a touch of spice to the sauce. If you want a spicier sweet and sour sauce, add more red chili flakes.
  • Garlicuse fresh minced garlic or garlic powder in this recipe.
  • Ketchupadds sweetness and helps to thicken the sauce.
  • Cornstarchhelps to thicken the sauce. Use a whisk to avoid any lumps.
  • Fresh Pineapple, Peppers, Red Onionif you want to add vegetables, I suggest using assorted colors of peppers, red onion, and fresh pineapple for sweetness.

HOW TO MAKE CHINESE SWEET AND SOUR CHICKEN AT HOME:

  1.  Start with boneless skinless chicken breast or thighs.  Cut into bite-size pieces.  Sprinkle salt on the chicken. Dredge the chicken in whisked eggs and cornstarch/flour mixture until coated. 
  2. To make the homemade sweet and sour sauce, place pineapple juice, sugar, vinegar, soy sauce, garlic, ketchup, and red chili flakes in a pan and cook over medium-high heat. Add cornstarch and cook until thickened. 
  3. Heat oil in a heavy-bottomed pot over medium-high heat. When frying foods, it is so helpful to use a thermometer. Let the oil heat up to 350 degrees.  Once the oil is ready, in batches, cook chicken for about 3-4 minutes until light golden brown.  Repeat with remaining chicken.
  4. Remove from oil and drain on a paper towel-lined plate.
  5. If adding vegetables to the sweet and sour chicken, saute the vegetables for several minutes before adding to the sauce or you may add them directly to the sauce to simmer.
  6. Toss fried chicken with the sweet and sour sauce. Serve immediately.

Sweet and Sour Chicken

Ingredients  

  • 4 Boneless Skinless Chicken Breast (cut into bite-size pieces)
  • Salt
  • 3 large Eggs
  • 1/2 cup Cornstarch
  • 1/2 cup Flour
  • Oil

Sweet and Sour Sauce:

  • 1 1/2 cup Pineapple Juice
  • 3/4 cup Sugar
  • 1/2 cup Vinegar (rice, apple cider, or white)
  • 2 Tablespoons Soy Sauce
  • 1/4 teaspoon Garlic Powder (or 2 garlic cloves, minced)
  • 1/2 teaspoon Red Chili Flakes
  • 2 Tablespoons Ketchup
  • 1 Tablespoon Cornstarch

Optional:

  • Red, Yellow, or Orange Pepper (cut into bite-size pieces)
  • 1/4 Red Onion (cut into bite-size pieces)
  • Fresh Pineapple (cut into chunks)

Instructions 

Sweet and Sour Sauce:

  • In a medium pot, add pineapple juice, sugar, vinegar, soy sauce, garlic, red chili flakes, and ketchup. Heat for 3 minutes. Whisk in 1 Tablespoon of cornstarch. Continue to cook for 5 minutes, until the mixture begins to thicken. Once the sauce is thickened, remove it from the heat.

Chicken:

  • Sprinkle chicken with salt. Place flour and cornstarch in a shallow dish or pie plate. Whisk eggs in a shallow dish. Dip chicken pieces in egg mixture and then flour mixture. Place on a plate.
  • Heat 2 -3 inches of oil in a heavy-bottomed pot over medium-high heat. Using a thermometer, let it reach 350 degrees. Working in batches, cook several chicken pieces at a time. Cook for 3-4 minutes, turning often until golden brown. Place chicken on a paper-towel-lined plate. Repeat.
  • Toss chicken with sweet and sour sauce. You may reserve some of the sauce to place on the rice. Top with fresh pineapple chunks.
  • If using vegetables, either saute them with a touch of oil before tossing them with the sweet and sour chicken or add them to the sauce. If you add them to the sauce, they will be softer.

Notes

If you want a tangier sauce, add 1-2 Tablespoons more vinegar.

    Made it, loved it, and I have just 1 suggestion, for the sauce. When you add cornstarch to any liquid that is hot, put the cornstarch in about a tablespoon of water and make it like a slurry. I would then take the sauce off of the heat and stir it in to thicken. I added the cornstarch right into the hot liquid like you said, and got lots of clumps. I knew better, but was busy just following the directions. Had to strain it, and then added the cornstarch with the little bit of liquid that I made. No clumps, just perfect sauce. Just in case there are new cooks out there, I hope that will be helpful.
