I grew up making fruit pizzas for most occasions. If I had to bring a dessert for a bridal shower, a party, or a potluck…I loved to bring my famous fruit pizza recipe. I wanted to create a smaller, personal-sized fruit pizza so Fruit Pizza Cookies were born.

I love them because of the sugar cookie crust, a rich cream cheese frosting, and fresh fruit and they are just universally loved. I changed up the recipe a bit and used my soft sugar cookie recipe and topped it with a simple vanilla bean cream cheese frosting recipe and then topped with some gorgeous fruits.

How to make Fruit Pizza Cookies:

Make the Sugar Cookie Dough. In a mixing bowl, cream together butter and sugar until light and fluffy, about 3-4 minutes. Beat in the egg, egg yolk, and vanilla until combined. Add flour, baking powder, and salt. Stir just until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This makes the dough easier to roll and shape.

Bake the Sugar Cookies. Preheat your oven to 350 degrees. Roll the cookies in 2 ounce portions. Place them on a parchment-lined baking sheet. Bake for 8โ€“10 minutes, or until the edges are just turning golden and the centers slightly underbaked. Let cookies cool completely on a wire rack before frosting.

Make the Cream Cheese Frosting. In a bowl, beat the softened butter and cream cheese until smooth, about 3 minutes. Add in the powdered sugar and vanilla, mixing well.

Prep the Fruit. Wash and dry all fresh fruit thoroughly so it doesnโ€™t add extra moisture to your cookies.

Assemble. Spread a generous layer of cream cheese frosting over the cooled cookies. Arrange the sliced fruit in a fruit pizza style on the top.

Frequently Asked Questions (FAQ’s):

1. Can I use store-bought cookie dough?
Absolutely! Pre-made sugar cookie dough is a convenient shortcut. Follow the baking directions on the package and cool them completely before frosting.

2. How far ahead can I make them?
You can bake the cookies 1โ€“2 days ahead and store them unfrosted in an airtight container at room temperature. Frost and top with fruit on the day you plan to serve for the freshest taste and texture.

3. Can I make the dough in advance and freeze it? Can I freeze the sugar cookies?
Yes, the dough freezes well. Roll it into a log or form a disc, wrap tightly in plastic and aluminum foil, and store in the freezer for up to 2โ€“3 months. Thaw in the fridge before rolling and baking. The sugar cookies can be baked ahead of time and frozen in freezer-safe bags.

4. Do I have to use cream cheese frosting?
Cream cheese frosting pairs wonderfully with the fresh fruit and gives that classic โ€œfruit pizzaโ€ flavor but you can omit it and use a buttercream frosting made with only butter, powdered sugar, and vanilla.

How to Store Sugar Cookie Fruit Pizza Cookies:

  • Once frosted and topped with fruit, store the cookies in a single layer in the refrigerator in an airtight container. Because of the cream cheese frosting, the cookies are best stored in the refrigerator. Eat them within 2โ€“3 days for optimum freshness.
  • Itโ€™s best to freeze the cookies without the fruit. You can freeze plain sugar cookies for up to 3 months, then thaw and decorate as desired. Frosted cookies (without fruit) can be frozen, but the texture of the frosting may change slightly upon thawing. Fresh fruit tends to go mushy after freezing, so itโ€™s not recommended to freeze them fully assembled.
