I love to make these protein cottage cheese pancakes on Sunday to store in the refrigerator during the week. They become a quick grab and go breakfast for my family. My kids love these cottage cheese pancakes!

How to make COTTAGE CHEESE PANCAKES:
- ย In a blender, add eggs, cottage cheese, rolled oats, melted butter, real maple syrup, vanilla, baking powder, and salt. I reach for Shamrock Farms low-fat cottage cheese. I also use gluten-free rolled oats.
- Heat skillet over medium-low heat. ย Once it is heated, add a pat of butter. Pour pancake batter in skillet. Watch carefully for the pancakes to begin to bubble. Flip and cook both sides.
- Top with butter, real maple syrup, and fresh berries.

- 2 cups Low-Fat Cottage Cheese (such as Shamrock Farms)
- 6 large Eggs
- 2 - 4 Tablespoons Melted Butter (depending on preference)
- 4 Tablespoons 100% Real Maple Syrup or Sugar
- 1 teaspoon Vanilla
- 2 cups Rolled Oats (I use gluten-free)
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- Butter (for griddle or skillet)
Instructions
- In a blender, add cottage cheese, eggs, melted butter, real maple syrup or sugar, vanilla, rolled oats, baking powder, and salt. Blend until completely pureed.
- Heat skillet over medium-low heat. Once it is heated, add a pat of butter to the skillet. Pour pancake batter onto the skillet and watch carefully. Turn as soon as it becomes a light golden brown color and bubbles appear on the top.
- Serve with butter, real maple syrup, and fresh fruit.

This recipe is amazing! Every time I enjoy these pancakes I canโt believe it has two ingredients I donโt like and donโt eat, eggs and cottage cheese! But, blended together with oatmeal and syrup they are delicious and you donโt miss the flour. We heat them in the toaster the next day and they are crispy and warm. No need for butter or syrup.

Will the prepared batter keep in the fridge if wanting to make a smaller amount, or use it up and freeze some of the cooked pancakes?
