This double chocolate bundt cake is drizzled with a decadent chocolate ganache, which is basically the most simple chocolate glaze. It is a chocolate lover’s dream cake! If you want to elevate the chocolate factor in this bundt cake, add chocolate chips. I always add chocolate chips and it ends up being a Chocolate Chocolate Chip Bundt Cake and it is out of this world good!

This Double Chocolate Bundt Cake is extra moist because of the combination of butter, sour cream, and extra egg yolks. I always suggest using buttermilk or sour cream in cakes because they create such a moist and tender texture.

The key with baking bundt cakes is to make sure to spray the pan very well with non-stick cooking spray to ensure to cake comes out smoothly. My favorite Bundt Pan is this Nordicware Classic Anniversary Bundt Pan. Make sure to spray in all of the nooks and crannies of the pan.

How to make the Best Chocolate Bundt Cake:

  1. Melt the butter. In a bowl, whisk together melted butter, hot water, and cocoa powder. The hot water helps to “bloom” the cocoa powder and bring out the richness and depth of flavor of the chocolate. Make sure to use high-quality unsweetened cocoa powder. 
  2. Use full-fat sour cream. You want that thickness and fat content to create the moistest cake possible. 
  3. Make sure to thoroughly coat the bundt pan with non-stick cooking spray. Also, make sure your cooking spray is fresh and hasn’t gone bad. Sometimes when it has sat around for too long, it tends to go rancid and will create a weird flavor in the cake. 
  4. Don’t over-bake the cake. Watch it carefully and use a toothpick or cake tester to test for doneness. Let it cool for about 5-10 minutes and then carefully run a knife along the sides and then remove the cake from the pan onto a cooling rack. You don’t want to wait too long or the cake may stick to the pan. 
  5. Make a chocolate ganache drizzle. This is made with two ingredients — chocolate and heavy cream. You can make it with your favorite type of chocolate — semi-sweet, milk chocolate or dark depending on taste preference.

Ingredients  

  • 1 cup Butter (melted)
  • 2/3 cup Cocoa Powder
  • 3/4 cup Hot Water
  • 2 cups Sugar
  • 1 3/4 cups Flour
  • 1 1/2 teaspoons Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Sour Cream (full-fat)
  • 2 large Eggs plus 2 Egg Yolks
  • 1 1/2 teaspoons Vanilla
  • 1 cup Chocolate Chips (optional)

Chocolate Ganache Glaze:

  • 6 ounces * Chocolate Chips (semi-sweet, milk, or dark)
  • 1/2 cup Heavy Cream

Instructions 

  • Preheat oven to 350 degrees. Generously spray a 12-cup bundt pan with non-stick cooking spray, making sure to coat all of the nooks and crannies. Set aside.
  • In a large bowl, add melted butter, cocoa powder, and hot water and whisk together.
  • Fold in sugar, flour, baking soda, and salt. Stir to combine. Fold in sour cream, eggs, egg yolks, and vanilla.
  • Pour into the greased bundt pan. Bake for 40-50 minutes or until the toothpick comes out clean when inserted into the center of the cake.
  • Let cake cool for 5-10 minutes. Then run a knife along the edges to loosen. Invert onto a cooling rack. Let cool before drizzling with chocolate glaze.

Chocolate Ganache Glaze:

  • In a microwave-safe bowl, add chocolate chips and heavy cream. Cook on 50% power for 45 seconds. Stir and repeat until chocolate is melted and silky smooth. Use a whisk for extra silky texture.
  • Using a spoon or knife, drizzle the chocolate glaze onto the cooled bundt cake. Cut into slices and serve with vanilla bean ice cream.

Notes

  • 6 ounces equals 1 cup of chocolate chips. Chocolate is measured slightly different and 6 ounces = 1 cup.

  1. I tried this 3x and it didnโ€™t come out of pan. I made another recipe for a lemon bundt cake and it came out. What am I doing wrong? my pan seems deeper then I remember as a kid but the knife came out clear. I waited one time long to cool off and 2x 5 to 10 minutes it was hot and very moist

    I added chocolate chips to the batter and the sunk to the bottom of the pan which is the top of the cake. So when the pan was inverted the cake top stuck to the pan. Covered it with icing so it looked ok. Tasted wonderful!

    1. I had the same issue as another baker with the choc chips sinking and sticking. What can I do so the chips stay suspended in the mix?

    Now you did it, I will never be the same now. Talk about FAT and sassy, well that is me after I get through with this Beautiful Cake, at least the fat part anyway. I love chocolate cake………It’s good anytime, so I eat it all the time so I don’t miss anything. I will try this out this weekend. I have people coming, so I won’t eat this all by my self. I’ll let you know how that goes. By the way, The Lemon Ricotta pancakes are to die for. We love them.
