How to make Scotcheroos with Chex Cereal:
Line 1-2 baking sheets with parchment paper, silpat silicone sheets, or spray with non-stick cooking spray. Set aside.
Heat a saucepan over medium-low heat. Add sugar and corn syrup. Stir until dissolved. Do NOT let this mixture come to a boil so watch carefully. Once the sugar is dissolved, remove from the heat, add the peanut butter, and stir until combined. This should only take 3-4 minutes.
Fold in the Rice Chex cereal and stir well to coat, being careful not to break the Rice Chex cereal too much. Simply scoop or spoon small portions onto the prepared baking sheet. Carefully press the mixture together.
