My kids love hitting Cheesecake Factory whenever everyone is in town. The menu is extensive, the portions are huge, and they love it! I was researching what are their most popular appetizers and one of them is their Buffalo Blasts. Of course, we had to try them and then recreate them at home.

  • Cooked Shredded Chicken: I love to use rotisserie chicken since it is so convenient.
  • Buffalo Sauce: I suggest using your favorite hot wing buffalo sauce.
  • Butter: Adding melted butter adds richness to the buffalo sauce.
  • Shredded Cheese: Use cheddar, Monterey jack, mozzarella cheese, or a mix of cheeses.
  • Pepper: To add some more flavor, sprinkle black pepper into the chicken mixture.
  • Wonton Wrappers: These square egg roll wrappers can be found in the refrigerated section of the grocery store.
  • Oil: This is used for frying the buffalo chicken wontons. I suggest using a neutral oil such as vegetable or canola oil.
  • Optional: add sliced green onions into the mixture for more flavor.
  • Dipping: I suggest dipping the crispy buffalo chicken wontons into ranch dressing or blue cheese dressing.

  1. Check the oil temperature. I suggest keeping the oil at about 350 degrees F so keep a kitchen thermometer handy. If the oil is too hot, the outside will burn before the inside warms. If the oil is too cool, the buffalo blasts will turn too greasy.
  2. Avoid overcrowding. Fry in small batches so the oven temperature doesn’t drop too much.
  3. Drain excess oil. Have a stack of paper towels on a plate ready so when you remove the buffalo blasts from the oil, it will help maintain the crispiness.
